BADAM PISIN

Almond Gum or Badam Pisin (Tamil) is a commonly used ingredient in one of Tamil Nadu’s famous drink called Jigarthanda. It is obtained from the barks of the Sweet Almond tree. This should not be confused with the Indian Badam Tree. The Sweet Almond tree oozes out a gum textured item from its barks. This is collected, dried and cooled which resembles like small crystal-like stones. It is softened by soaking overnight in a cup of water. You can consume this by making many types of deserts.
